Fish are mostly easily foul andhigh perishable food, requiring gettingquick, clean, careful and cold. So the quality of fish can retained since fish raised from the sea that the distributed or marketed to the consumer. One of the handling of fish done through the implementationcool chain system. Hence the need of the Organoleptic and testing Total Plate Count in Rastrelliger kanagurta L.
This study aims to conduct a study on the quality of Rastrelliger kanugarta Llanded in Fish Auction Venue Asemdoyong Pemalang by Organolepticand testing Total Plate Count. The method used in this study is a case study with data collection by observing and recording samples ofRastrelliger kanagurta L, which is then tested for semi-quantitative test kit in testing and monitoring Quality of Fishery Products Pekalongan. Analysis of data used in this research is the analysis of descriptive statistics which is used to analyze data by describing or depicting the data that has been collected without intending to apply general conclusions or generalizations.
Based on research results, Organoleptic of Rastrelliger kanagurta Lhas this 6,7 until 8,7 with intermediate 7,8. It means that it is still suitable to consume. Whereas, in Total Plate Count, the greatest number of bacteria is on graph C5 = 98x103 while the lowest is on diagram A2 and C4 11x103. Total Plate Count is a measure of the total number of bacteria in a material. The quality of Rastrelliger kanugarta Llanded in Fish Auction Venue Asemdoyong Pemalang is fulfil the standard SNI.01-27291-2006 that limit bacterial colonies on fresh fish not more than 5.1055.
